Canning Process:

Canning Jalapeno peppers ensures quality and long term availability. If you leave your jalapeno pepers in an open space, they will not remain useable and will spoil shortly. Canning is a safe way to preserve jalapenos.

- First you have to collect jalapeno peppers as per your requisite quantity. Gather high quality jalapeno peppers. Because jalapenos are canned for future use, if you collect better jalapeno peppers, their quality will remain fresh longer. Then you have to wash the peppers using bowl or baset. But be careful about your face and eyes. The peppers might irritate your skin and eyes.

- After that, slice the peppers by ¼ of every piece. Per 3 pounds jalapeno peppers you have to mix 1.5 cups of pickling lime and 1.5 gallons of water. You can use SS steel pot, glass or plastic pot (food grade). Be careful when you mix these. The mixture has to remain 18 hours in refrigerator.

- After thoroughly soaking the peppers in lime mixture you can drain the lime liquid. Then you have to rinse the peppers with fresh cold water gently but clearly. You can keep the jalapeno peppers 1 hour in refrigerators.

- Repeat the washing process once or two more times. Remember to keep jalapeno peppers in the refrigerator during the rinsing process.

- Wash the pint jars with boiled water. Keep the jars hot until use.

- Put mustard oil 1 tbsp and celery seed 1.5 tsp before putting in the peppers.

- Then put the jalapeno peppers and leave 1 or ½ inch blank space in the head of the jars.

- Use cider vinegar, water 1.75 cup water and canning salt with jars. Then the jars have to boil with high heat.

- Clear the bubbles from the top of the jar.

- Finally you have to cover the jars with metal lids or other safe lids which are water and air resistant.

This procedure is easy and ensures your family’s health by your own hand without depending on the markets’ products.
