Since opening the restaurant in 2011 the owner, Scott Quan, felt that it was time for a facelift and decided to make changes that would spruce the place up a bit. Escape Fish Bar is unique in many ways, but in particular with the blend of recipes they use to prepare the high quality food that their customers have come to enjoy. Taking tips from a popular restaurant in the Northwest and blending it with recipes from Costa Rica and other Central American countries, they have developed their own recipes that customers find extraordinary.

The owner, Scott Quan, shops daily to provide all fresh vegetables and fish. He wants to make sure that what they serve is fresh and well-cooked for the customers of the restaurant. Along that line he allows customers to request how they want certain dishes prepared. In this way customers feel that the food is prepared just for them instead of being served the same thing that other customers receive.

When you look at the history behind the opening of Escape Fish Bar you begin to understand their success. A few years ago Scott was visiting the Northwest and found a restaurant by the name of Red Fish Blue Fish. It wasn’t much to speak of since they operated out of a modified shipping container, but the line of people waiting to buy food was enormous. Out of curiosity Scott decided to join the line and see what it was all about.

What he found was amazing. The food was prepared with fresh fish in a very special way. He visited the restaurant several times while in the area and got to know the owner. It was from that encounter that Scott realized that he wanted to try to duplicate the restaurant in San Diego. He converted one of his yogurt shops in the Gaslamp Quarter and the rest is history.
