One thing that can tip the balance is to be able to offer a tempting selection of freshly baked muffins, breads and pastries each morning. Unfortunately, this puts café owners under some pressure first thing, as they get the baking underway and prepare to open up.

The Rational SelfCooking Center is designed to take the pressure out of these sorts of situations. It is especially suitable for all bakery items, muffins and larger sponge cakes as well as croissants and breads. At the touch of a button, and fully automatically, it constantly monitors the temperature and humidity levels to provide the perfect baking environment for any size or type of load.

All the baker has to do is select the baking mode, decide on the degree of cooking from light to dark,  place the core temperature probe into the middle of the products so they do not overcook and dry out, and the SelfCooking Center does the rest. There is no need to enter a temperature, cooking time or humidity level.

For yeast breads there’s an option for a proving process before baking. This means that bakers no longer need a special proving cabinet to produce perfect bread.  Different doughs can be left to rise at the same time and then the SelfCooking Center automatically switches to baking mode so they are all ready, warm and fresh for the early customers.

What’s more the baker doesn’t even have to clean the SelfCooking Center at the end of the day. With the new CareControl programme the unit cleans itself – but only when needed. Throughout the baking process the CareControl is continually monitoring the unit, assessing the degree of soiling and the type of items being baked. Once it detects that cleaning is necessary it alerts the baker who pops in a couple of cleaning tabs and presses start – that’s all there is to it.
