July Seminar Teaches How to Cut Restaurant Labor Costs

“Labor is the second highest expense in any restaurant,” said Peters. “The only thing that costs restaurant owners more than their labor is empty seats. Most restaurants are run with one number in mind: prime cost. But prime cost is the combination of a few different costs in a restaurant: the combination of a restaurant’s total cost of goods sold and labor costs. Most independent restaurants have a prime cost well above 65 percent; Peters teaches restaurant owners how to cut costs to achieve a 55 percent or lower prime cost.

“Restaurants are traditionally very hard businesses to make money in and with increasing food and transportation costs, the margin seems to get slimmer every year,” said Peters. “Prime cost is the magic number. If a restaurant owner can operate at or below 55 percent prime cost, they will make money in their restaurant regardless of the rising costs. That’s what we teach attendees.”
