Probiotics are in the news frequently today. It seems that the farther people try to advance the more they learn that many things people have been doing for eons were right all along.

Take sourdough bread. Until the mid 1850s the world made their bread with sourdough. Yeast manufactured and processed came into use at that time. But for the thousands of years before people had always made bread with a sourdough starter.

Sourdough starter was/is often only flour,water, probiotic Lactobacillus and wild yeasts. This was kept fermenting and ''fed '' daily. To feed a starter means to give it more flour or food and clean non chlorinated water. Chlorine kills living things and sourdough starter is a living thing. When they wanted to make bread they would remove some of the starter and mix it with their bread ingredients and let the bread rise. The bread flour is actually fermenting currently and the fermentation process ,by probiotic Lactobacillus, is what makes the bread rise. If sourdough is left for a few days more it produces a layer of alcohol on the top! Should this ever happen to your starter just pour some of it out ,feed it and it will be fine.

Sourdough starter was a prized household item. Sourdough starters take on a flavor of their own as well as abilities to rise. The varieties are endless. I use a sourdough starter that originally comes from Lyon France. It is an organic starter and it is sold on Amazon. It is sold dry and has enough to start your starter three times. It is a starter passed down for generations of bakers in Lyon. It has a mild ,delicate flavor, and usually has a mild honey smell to it. Very good starter.

But an easy and delicious way to get probiotics in your system is to get sourdough into your diet. Baking your own bread can be very satisfying. When I make someone a sandwich, using the artisan bread I make with this sourdough, they will often say "this bread is better than the bread at(then naming a well known national bakery/sandwich shop)! It really is remarkable bread. The only ingredients I use in my bread are , flour,salt,water,a little olive oil or canola oil and the sourdough starter, that is it! It is also a very inexpensive bread to make.

I also make sourdough pancakes . And these taste very similar to crepes, they are really delicious. I use the recipe from sourdoughstarter.info website. The bread recipe I use is there too.

But if you have been thinking of getting probiotics into your diet you could hardly find a better way. Once you start using sourdough and get used to the incredible taste of it you will find it difficult to go back to regular processed bread. And why should you go back to eating processed bread? You can make sourdough pizza dough,sourdough pancakes,sourdough bread all for a lot less than what you can buy them from the store.
