Chocolate Bar founder Alison Nelson along with Vanessa Perry Keefe and head baker Noelle Ridings open this modern American-style bakery featuring fat pies, killer cookies, moist cupcakes and locally roasted coffee at 535 Hudson between Charles and Perry Streets. The name celebrates WW1 U.S infantry forces who, after marching through the dry terrain of northern Mexico while fighting Pancho Villa's army, were often covered with chalky dust giving them the appearance of unbaked dough. It also honors New York's iconic Doughboy statue located in Abingdon Square Park where the bakery closely resides. This bronze torchbearer, depicted defending his regimental flag, stands in honor of those who lost their lives from the neighborhood of Greenwhich VIllage. Dedicated in 1921 in the presence of 20,000 spectators and more than 100 Gold Star Mothers, it salutes the memory of all who bravely went forth by the call of their country.

Inspired by raw New York workman committed to craft, the bakery is outfitted with repurposed bars and counters from the design duo Built by Wrecked. The craftsman utilize reclaimed wood from NY State barns and New York City buildings to fashion a space they like to call “Industrial meets small town.” Antique oval frames honoring our boys in uniform abound complimented by Legionnaire flags, artillery boxes and cast iron army men. Vintage-era comic books and Illustrated War News magazines are there for customers to peruse, while authentic WW1 Zippo and Trench lighters are available for purchase at the register.
