Roland Holzer, Executive Chef at the Kempinski Hotel Corvinus brings his Nordic grill dinners to Budapest’s nightlife on Thursdays, inspired by cuisines as far as the Arctic Circle. His Nordic Buffet features delicacies from Alaskan, Canadian, Russian and Scandinavian gastronomy.

The concept of this new Nordic grill buffet was informed by Mr. Holzer’s own personal experiences. His wife hails from Russia’s St. Petersburg, and they spend much time in the North in the summer, where Russian cooking takes center stage. A Finnish friend, Miko, who’s also a chef, also added his impressions to the makeup of the menu, what’s more, he contributed recipes to it. On the Canadian dishes, Mr. Holzer consulted a former chef colleague, who works in that country.

Nordic countries’ cuisines are very different from Central Europe’s on account of different local culinary traditions as well as different climates. Due to the brief vegetation period, not many vegetables that we know and eat here, grow there, while there are other, exotic vegetables available. In addition, Nordic mountains, lakes and seas are a rich source of meats that we here consider rare.

Have you for example tried Yam salad? Or Norwegian Lefsa?  Scallops comes all the way from Canada, while crabs all the way from Kamchatka.

Smörgasbord is a Swedish custom: that’s how we serve our authentic Nordic buffet in the Kempinski’s restaurant and on the terrace overlooking Fashion Street. Russian style, we offer vodka for starters, for further authentic impressions. All the buffet’s selection represents Nordic culinary traditions, offering delicious and healthy choices. Sample an unparalleled assortment of fish and seafood, which remains a rarity in Hungarian diets. But if you prefer red meat, you’re still in for a treat: try lamb from Iceland, beef from Canada and deer from Lapland. The dessert selection brims with mood boosters such as "Bolludagur" Icelandic cream filled buns or waffle with the purest Canadian maple syrup.
