FRIMA will be featuring the high tech VarioCooking Center on Stand K41 at LACA 2011. The VarioCooking Center is an extremely energy efficient cooking appliance for the professional kitchen that can boil, fry and deep fry in one unit.  It is up to three times faster than traditional equipment and excellent for long, slow overnight cooking as well as accurate trouble-free pressure cooking.
In schools and colleges it can replace many conventional cooking appliances, saving space and simplifying cooking procedures. For this reason it was chosen to replace two brat pans and a pasta boiler for the new kitchen at Alsop High School, Liverpool.
“You can’t burn anything on it or boil anything over. It has a built in intelligence that supervises the whole cooking process for you,” says Angela Morrison, catering manager. “Once the settings have been punched in you can walk away, answer the phone and get on with something else. The soups need a little stir occasionally but we don’t have to watch them all the time now.”
Another aspect of the VarioCooking Center that appeals to kitchen staff is that it is so easy to clean.
“All we have to do is swish round the pans with the integral water jet, tilt the pan and the dirt drains away. It saves us time, effort, water and cleaning products,” explains Angela.
The VarioCooking Center also brings new levels of versatility, speed and ease of use to deep frying for cooking those ever popular chips. Its speed is a result of the special VarioBoost technology in which a network of heating elements ensures a quick and even heat distribution system over the bottom of the pan. This can almost halve batch frying time.  In tests, the VarioCooking Center took just 65 minutes to deep fry 75kg of food in six batches - compared to 120 minutes in a conventional fryer.
