Chef Bryan Webb is drawn Back to the KitchenBy: Bryan Webb Bryan will be cooking his simple classic style of food using the finest spring produce, solo in the small kitchen. In the summer of 2024, Bryan and Susan sold the business with the intention of retiring, but after some extensive travelling, Covino owner Chris Leadler lured Bryan back with the offer of a three-month 'pop up' in the popular restaurant/wine bar. Chris was a regular at Tyddyn Llan, and when his head chef left at the turn of the year, he thought he would change tack and rather than search for another full-time chef, would instead have a series of 'pop up' restaurants, with different chefs taking over the kitchen in three-month stints – with recommended wines by the glass for each dish. Comments Bryan: "After over 40 years being tied to a stove, I found it tough to just walk away. I guess I'm like an old boxer unable to give up the ring! "Customers can expect tagliatelle with broad beans, bacon and mustard; free range chicken with morels and tarragon; wild bass with lava bread butter sauce (me on a plate!); plaice with pea mash and many more of my signature dishes that I have been cooking throughout my career." Covino is situated on Northgate street, Chester, and is a small intimate restaurant with only 24 covers, with Becky running the friendly front of house, while Chris the owner develops the wine list with over 130 wines from around the world, ranging from the classics, all the way through to the more left field.
