The platter will feature oysters, jumbo shrimp, snow crab, and mussels served with lemon, horseradish aioli, and pink cocktail sauce. A hot appetizer course will follow with the sweet flavors of fried burrata, tomato, basil, shallots, and balsamic. For the heartier appetite this course will also include pork belly anticucho served with tare, scallion, and sesame. Chef Do will continue to touch all the senses with his dishes inspired by his passion and love of for the art of food. At the heart of his Valentine's Day dinner he will serve seared diver scallops complemented with truffle boniato puree, charred corn, pancetta, and shallots. A prime rib roast will also make the menu, which will be accompanied by potato gratin, garlic haricot vert, grilled onion, and au jus. This day of love and friendship will come full circle, like the symbolic rings, with dessert. This course is sure to sweeten with a strawberry tart, vanilla pastry cream, glazed strawberries, and aged balsamic reduction. No Valentine's Day dinner is complete without bubbly and wine.
