He went on to study culinary arts at the Global Academy in the Philippines. After moving to the UK in 2008, Tim worked for the Jamie Oliver Group. He also gained significant experience with Michelin-starred chefs and top restaurants in London. Tim is currently a sous chef at Bonnie Gull, a leading seafood restaurant in the British capital. maynila has lined up several events featuring Tim's culinary creations starting with a Christmas-themed pop-up dinners in early December 2015 in London. He is also going to facilitate some cooking classes alongside maynila's Creative Director and co-founder Roni Bandong. "Finding Tim who not only shares maynila's vision but also oozes talent is a real privilege. It gives great strides to our mission in making Filipino food mainstream in the UK. His approach of breaking down each dish to their individual components using modern cooking techniques whilst preserving authentic flavours is a sure sign that he’s going to go a long way in the industry.
