This course is about the Hazard Analysis and Critical Control Point (HACCP). It will introduce the role of the HACCP. It will start with a chronology of the HACCP program in the US food industry, in which it will cover important historical events and program milestones.

The seven important HACCP principles and elements will be discussed. This will give participants a total overview of HACCP. To help participants understand this important food safety initiative better, the interaction of connected, prerequisite programs will be discussed as well.

At the end of this course, participants will have gained a better understanding of the concepts and principles of HACCP. The knowledge of the HACCP initiative and how the program is developed will augment each team participant’s commitment and ability to perform critical responsibilities related to monitoring and documenting the critical controls.
