Feb. 26, 2011 - PRLog -- Whether you read a health magazine or consult a health professional they have only one thing to tell you eat colored vegetables and try to stay away from white carbohydrate food as far as possible. But are they scientifically correct with their argument? We are asked by health professionals to avoid everything that is white or that has a high glycemic index. But the fact is that they have been highly mistaken.

It is a fact that white bread and any food article that is made out of refined white sugar and flour are harmful to our health, but it cannot a generalized to all white carbs. The latest trend is to eat a lot of colored vegetables since they are rich in protective antioxidant and also to avoid everything that is white. This is a completely ridiculous teaching that is going around. White foods like potatoes and garlic are not that bad at all. They are filled with essential nutrients that you wouldn't find in any other food items. Veggies like cauliflower, garlic and onions are filled with specific nutrients, phytonutrients, minerals and fibers that are hard to find in other vegetables. You would be surprised to know that white mushrooms have a good amount of unique nutrients and antioxidants, esp. high in antioxidants called polyphenols and ergothioneine.

If we talk about potatoes, most health experts argue that it is filled with bad carbohydrate and is harmful for our body. Since potatoes have a big glycemic index most health professionals advise us to stay away from potatoes as much as possible. But that is outright nonsense. There are a variety of things that determines the blood sugar levels in our body such as how we process the food and what are the different combination of food that we eat etc and not just the Glycemic Index. It is highly recommended to eat the right combination of food in order get the right balance of blood sugar and fats in our body, because that decides how your body reacts to the carbohydrates. For example if you combine a carbohydrate rich food that has a high GI with fibrous food, with good fat and proteins our body produces lesser blood sugar.

So potatoes and other white carbs are indeed very essential for our body functions contradicting to what the fitness freaks say But it is extremely crucial how you have it. Again if we take the example of potatoes, you should have them without it's skin peeled off, half or full boiled or baked and obviously without insulting it by deep frying. Potatoes when deep fried are nothing less than poison to your body. French fries are the best example for this, which is generally deep fried in hydrogenated oil and contains heavy amounts of the ugly trans fats which develops body fat and also causes cancer.
