Grape Beginnings was started in 2002 by Winemakers Rich Trawinski and Frank D’Aponte. Both have received numerous awards and accolades for their Winemaking and have been frequently featured in Winemaker Magazine for their award-winning wines.

May 13, 2010 - PRLog -- With over 20 years of combined Winemaking experience and a love for the craft, Rich and Frank established Grape Beginnings. The 5,000 square foot Winery is conveniently located in historic Freehold, New Jersey and is setup to provide the aspiring Winemaker and Wine lover alike, expert guidance on winemaking, while creating a fun and enjoyable experience. Since it’s inception, Grape Beginnings has become the embodiment of their vision- a place where people can gather to learn about Winemaking and produce their own Ultra-Premium Quality wines at reasonable prices. For Rich and Frank, Winemaking is a passion. Grape Beginnings allows them to share this passion with clients and pass along their Winemaking knowledge.

The Winemaking Process

Grape Beginnings provides the wine enthusiast with a "hands-on" opportunity to learn the art and science of Premium-Quality winemaking in a clean, "State-of-the-Art" Winemaking Facility. The complete Winemaking process runs approximately 9-months and is basically broken down into 4 fun-filled "sessions" that are about 1-2 hours each.

Session#1 Crushing/Destemming

Your fresh ultra-premium wine grapes usually arrive between the 2nd week of September and the end of October (for the California & Italian grape season) or late April/early May (for the Chilean & Argentina grape season) and are crushed and destemmed using professional crusher/destemmer equipment just like the ones used at the giant wineries throughout the world. The "must" (crushed grapes) is pumped into a fermentor and inoculated with a specific yeast strain for the commencement of primary fermentation.

Session #2 Pressing

Approximately a week after the “crush” you will return to the winery to Press.  You will begin by transferring the “free run” wine into your premium-oak wine barrel.  The “must” is then loaded into one of our easy to use hydraulic presses where the “press juice” is extracted and then also transferred into your barrel.  The transformation of grapes into wine continues as the aging and settling process now begins.

Session #3- Racking

After a few months, you will return to “Rack your wine”.  Racking is simply the process where the wine is pumped out of the barrel and into another container.  The “Lees”(or Sediment) is washed from the barrel and the wine is then reintroduced into the fresh barrel where the final aging process continues.  The barrel is then “topped off” and placed back into storage.  Racking is typically done for California and Italian wines in February and March whereas Chilean and Argentinean wines are racked in July and August, depending on various conditions.

Session #4- Bottling

The last step! It's time to put your wine into bottles and adhere your own label. Now you can "kick back" and enjoy the fruits of your labor. There is a feeling of pride that comes from making your own "Private-Label wine". A wine that you can open with friends or family and be sure that everyone will enjoy!

Choosing your beer

Choosing the right beer is simple. Pick a beer that closest resembles your favorite suds or a beer that's completely different from what you usually drink, something that catches your interest.  We have a huge selection to choose from. We just only put the most popular selections on-line for the public to choose from. We can, usually, make a clone of whatever you need. Unique brews that need special ingredients can be made if you give us notice.

Types of beer

Brew-U offers a variety of beer recipes from light lagers to dark ales. While lagers tend to be lighter in color the range of bitterness could be from near water (think coors lite) to heavily hopped pilsners. Ales generally are maltier and mild in hop flavor.  Some specialty beers are full of hops like ESB's and IPA's.   We also have a few great stout and porter recipes.

The brewing process

  1. Choose your beer recipe from the menu selection.
  2. Gather and Weigh your ingredients.
  3. Brew in our custom-made Brew Kettles. (staff will assist).
  4. Let ferment for 2 weeks.
  5. Cold filter and store in keg until bottling.
  6. Bottle your beer and take it home.

Bottling and Caring for your beer

Beer will be bottled in a 22oz. "Bomber-Style" Microbrew bottles.  After your Microbrew is bottled, always store your beer in a cool, dark place. A fridge is ideal. There are NO preservatives in our beers; shelf life is reduced if you store in a warm place. Shelf life is generally 3 to 8 months.
