By: Union Hand - Roasted Coffee 115g self-raising flour 1 level teaspoon baking powder 115g spreadable butter 2 large eggs 115g golden caster sugar 1 rounded tablespoon instant espresso coffee powder 50g walnuts, very finely chopped250g mascarpone 1 rounded dessertspoon instant espresso coffee powder 1 tablespoon golden caster sugar 1-2 tablespoons milk 8 walnut halves Sift the flower and baking powder into a large mixing bowl then add the butter, eggs and caster sugar and coffee powder in to the mix. Stir the contents of the bowl until there is a smooth and creamy consistency. Once this is completed, add chopped nuts into the mixture. Divide the mixture into two tins and back in the centre of the oven for around twenty five minutes. When the cakes are fully cooked, place them on a cooling tray and start making the filling. Combine the mascarpone, coffee powder and caster sugar with 1 tablespoon of milk. Once the cakes have cooled down, spread the mixture across one cake before sandwiching them together before putting the rest of the mixture on top of the cake and finish off by putting walnuts around the outside of the cake.
