A Classic Bolognese Recipe

To start this classic Italian dish, Rallo Jr., gathers all of the pertinent ingredients to serve 10 to 12 people. Begin the dish with one pound each of ground pork, veal, and beef, along with two cups of finely chopped carrots, celery, and onions, two to three tablespoons of fennel seeds, 10 to 12 three ounce ladles of quality whole Italian tomatoes that have been crushed and salt and pepper to taste.  Finally, good Italian cooks always cook with quality extra virgin olive oil, so be sure to always have some on hand to recreate Italian dishes.

Begin the dish with a large hot sauté pan and coat the bottom with extra virgin olive oil and add all of the meats. Continually break the meats down to small pieces until they are fully cooked. Once the meat is cooked, add the vegetables and fennel. Be sure to mix the ingredients thoroughly so that all of the flavors are consistent within the dish.

Once the cooked ingredients are properly combined, add the ladles of tomato sauce while mixing the sauce together. Make sure the sauce is not dry, if it looks like it needs more tomato sauce then add some. Once the sauce has cooked, be sure to add salt and pepper to taste.

This Bolognese recipe can be served immediately with cooked pasta or you can easily freeze the remaining sauce to future use.

To serve this classic recipe, take a small sauté pan and add enough of the sauce mixture into the pan for one serving. Take hot cooked pasta of your choice and add it to the small pan. Slowly incorporate the pasta with the Bolognese sauce. While both the sauce and pasta are still hot, add one tablespoon of mascarpone cheese and mix it into the pasta. If you do not have mascarpone cheese, you can use ricotta to achieve a similar creaminess. Then add a sprinkle of Parmigiano-Reggiano cheese to the top and continue to mix.

To plate the pasta with the Bolognese sauce, add another dollop of mascarpone cheese with a sprinkle more of grated Parmigiano-Reggiano cheese for the perfect presentation.
