Rosh HaShanah:

According to the translation of the Mishnah by Rabbi Pinhas Kehati:

When the holy day of Rosh HaShanah fell on a Shabbat, in the Temple they would blow (the Shofar), but not in the medinah (outside of the Temple but in Israel). After the Temple was destroyed, Rabbi Yohanan ben Zakkai enacted that they would blow in every place in which there is a Court. Rabbi Eliezer said, Rabbi Yohanan ben Zakkai enacted only for Yavneh. They said to him, It is the same whether  Yavneh, or any other place in which there was a court.

Rosh HaShanah, according to the oral tradition of Judaism, or the Mishnah, is the anniversary of the creation of the world – the first day of the Hebrew month of Tishrei. This year, 2010 on the Gregorian calendar or 5771 on the Hebrew calendar, the Festival of Rosh HaShanah is three days instead of the normal two days. This is because the final day of the holiday ends during the beginning of Shabbat – it is therefore extended.

So, instead of two days you get to spend three sabbatical days with your family and friends, celebrating, exchanging traditional Jewish holiday gifts and dining together. http://www.mostoriginal.com/Judaica/

Sukkot:

Sukkot is a seven day festival, also known as the Festival of Booths or the Feast of Tabernacles.

This is one of the three pilgrimage festivals mentioned in the Old Testament. The other two are Pesach (Passover) and Shavuot (Pentecost).

The word Sukkot is plural for the Hebrew sukkah, which means booth; it commemorates that the Israelites were commanded by God to dwell in booths during the holiday. The holiday involves the construction of three-sided outdoor huts, with a flat roof, in which Jews must sleep and take meals. There is another commandment to have in your possession during Sukkot, a Lulav branch and a special citrus fruit called an Etrog.

According to the Mishnah, as translated by Rabbi Pinhas Kehati:

A Sukkah more than twenty cubits high is invalid. R. Yehudah declares it valid. A Sukkah less than 10 handbreaths high and which does not have three walls and which has more sun than shade is invalid. An old Sukkah Bet Shammai declares invalid; and Bet Hillel, valid. What is an old Sukkah? One made thirdy days prior to the Festival. But if it was made for the sake of the Festival, even from the beginning of the year it is valid.
