Feb. 13, 2011 - PRLog -- Gluten Free Around The World ( http://www.gluten-free-around-the-world.com ) today announces the release of the new book: Gluten Free Cakes from Around The World, available as an eBook. The book is the result of 26 years of collecting gluten free recipes from around the world.

These fabulous cakes, many flourless and grain free, are all gluten free and wheat free by tradition, not converted to gluten free. And many are casein free and/or low carb, or can be easily adapted.

Shelly Stuart, the Celiac Nurse (www.celiacnurse.com) and author of the informative book Gluten Toxicity, says "I really like this concept, cakes that have been historically gluten-free from various cultures around the world. Even more appealing, some recipes are for grain-free cakes and some are dairy-free as well."

The book includes recipes for all kinds of cakes: flourless, grain free cakes like the famous Sachertorte from Germany, and cakes with grains like lemon polenta cake from Italy. There are almond flour recipes and nut-free recipes, and many mouth-watering flavors like chocolate, orange, lemon, almond, and cinnamon.

Many of the recipes are dairy and casein free, and the book includes an amazing recipe for nut cream without dairy or eggs, that can be used as a topping or filling, a dessert by itself, or in the case of the chocolate version, even as a "fudge". It can be made with palm sugar for a low carb and high protein, but still luxurious, treat.

"My children are excited about this book. After all, what child doesn’t like cake... " says Ms. Stuart.

A gluten-free diet is followed by people with a gluten sensitivity, or intolerance, which may present itself in a number of ways. Symptoms range from mild and elusive to very extreme, as in Celiac disease, an autoimmune disease affecting the small intestine and preventing the absorption of nutrients. Gluten intolerance has been associated with many other diseases as well, and the understanding of it is still growing.

"The diet can be hard to follow and frustrating due to lack of understanding of how serious even a tiny speck of gluten can be. Whether it's from a grill, a sauce containing gluten, or an ingredient not listed on a label or menu,  people can get really sick. Add that to the lack of availability of affordable gluten free foods, and you have recipe for frustration and fear." says Pat Browne, author of the Gluten Free Cakes eBook,  and founder of the site Gluten Free Around The World.com.

"I've been gluten free and collecting recipes for gluten free traditional foods for over 25 years. I want to share them and help make living gluten free easier, and more fun, for people who are struggling with it."

"Being gluten free can be an adventure when people start to discover all the foods from around the world that are already gluten free. People are already familiar with many of these foods, like tacos, fried rice, and polenta. But cakes are a different story. There are tons of traditional gluten free cakes that are just as delicious as the flour-based cakes people are used to."
