A traditional Lamb Henry dish uses economical cuts such as shanks and shoulder and with cost-effective cuts of meats seeing a surge in popularity within the foodservice sector, Gilbert’s Foods aims to build on this growth during the winter months.

The traditional, slow-cooked, individual lamb joints are made using the finest New Zealand lamb, to a unique recipe designed by the team of development chefs at Gilbert’s Foods.

Quick and easy for busy chefs to prepare, the individual portions of lamb can be cooked using the sous-vide method for 20-25 minutes or in the microwave on full power for six minutes. The portions are ready to be heated from frozen or from room temperature. Once cooked, chefs simply cut across the top of the bag then pour the meat and its sauce onto a serving plate.

Available in 1.8kg cases, with six individual 300g portions per case, the versatile fully-cooked Lamb Henrys are available in frozen or ambient format so are ideal for chefs to store. Plus, the quality, taste and texture of each product is guaranteed for up to 12 months when kept in a freezer or cold store.

Chefs can experiment with presentation techniques and accompaniments or serve with roasted or mashed potatoes and garden vegetables, as the sauce gives the dish a flavoursome gravy.
