Talented new chef enters Milwaukee dining landscape

The Iron Horse Hotel announced today the addition of Maikel Correa as Executive Chef. Correa has been tapped as a young talented chef with experience in corporate and social catering and expertise in creating menus tailored to local ingredients.
 
Nov. 9, 2011 - PRLog -- The Iron Horse Hotel announced today the addition of Maikel Correa as Executive Chef. Correa has been tapped as a young talented chef with experience in corporate and social catering and expertise in creating menus tailored to local, seasonal ingredients.

While the new winter Iron Horse and Smyth menus reflect a collaboration between Chef Jason Gorman and owner Tim Dixon, Chef Correa’s initial contributions will be to create a new Library menu and update the catering menu. The latter will benefit from the Chef’s experience at the Merrill Hills, Mequon and Tuckaway country clubs.

Dixon has been involved in food experience at the hotel since its inception and believes the creative process between chef and owner has resulted in continuity for both guests and locals.

“Chef Correa has been recognized as a young, talented chef who can help execute the hotel’s vision of serving great Wisconsin comfort food with a sophisticated twist,” commented Dixon. “I look forward to working with him.”

Meanwhile, Chef Gorman will be moving on to a consulting role for Dixon Development, working directly with Dixon on developing new restaurant concepts for the firm’s out-of-state ventures.
