Alto-Shaam Cook and Hold ovens can be used for cooking and holding a wide variety of meat, poultry and vegetables, as well as for braising, baking, proofing bread dough or reheating convenience food. The ovens are easy to operate and little to no training is required.
The ovens have low energy consumption, low emissions and, in most settings, do not require oven hoods or outside venting. This alone can save up to £30 per 16-hr day of operation, as most traditional hoods cost up to £2 an hour to operate.
The ovens use a special heating system called Halo-Heat which surrounds the food with controlled, uniform heat. This gently and evenly cooks and holds the food, without the worry of drying out or burning. It also retains the food’s moisture and nutrients, increases product holding life and reduces shrinkage by up to 18 percent.
Alto-Shaam ovens are available in both manual and electronic operation and in a variety of sizes. The largest, measuring 574mm (w) x 819mm (d) x 1924mm (h) and has a capacity of 108kg. The ovens are stackable, for easy storage, and have castors for maneuverability.
The manual-controlled oven automatically converts from cook to hold mode when the desired cooking time has been reached. Simple controls make adjusting the time and temperature straightforward.
When cooking by probe the oven maintains a record of the highest and lowest temperatures to assure foods are cooked correctly. The SureTemp™ heat recovery system ensures that optimum temperature is quickly regained after the door has been opened, with an audible reminder if the door remains open for longer than three minutes.
