city views. Two-storey floor-to-ceiling windows frame the 360 views of Hong Kong. Marine blue hues surround in the texture of the natural wood floor and plush embossed leather seating is offset with warm yellows and antique brass tones. Guests are offered intimate booth tables or seating on the glamorous catwalk - clever tiering ensures that every table and diner have uninterrupted harbour views.

The three venues-in-one at Aqua include:

Aqua Roma’s new chef, Giuliano Dacasto focuses on traditional Italian cooking with a modern flair, with signature dishes such as Blue fin tuna tartar with lime segments, pink pepper and fresh herbs aside a Pommery mustard and yoghurt sauce and a green apple coulis; and grilled star anise roasted King prawn on sauteed baby spinach,red onions and pine nuts with a smoked speck sauce.

Aqua Tokyo’s Chef Iwahashi Tatsuya presents a spectacular array of sushi and sashimi prepared from carefully selected seafood delivered daily. Among his specialty dishes are Mizuna, pot herb and mustard leaf salad with grilled bean curd skin and crispy bacon drizzled with a mirin, sake, soy, sesame oil and chilli dressing; and Stone grilled Wagyu beef sirloin and crispy garlic chips with three sauces.

Overlooking the restaurant is Hong Kong’s glamorous bar and club – Aqua Spirit. This panoramic mezzanine lounge bar is also resplendent in marine blues and warm antique brass tones. Centre-stage is the bar, home to aqua’s extensive cocktail list, including our famous Ciao Lovely, with Tequila Anejo, Strega, Lillet Blonde, homemade chamomile & chili agave nectar–designed to share!
