All American Fish and Chips Recipe Celebrates Independence from Typical Pub Fare

What fish is more American than Catfish? None. Instead of deep fat frying, Chef Mick does his recipe on a common Air Fryer. Yes, while decluttering his house, he ran into that thing he bought on sale during the big air frying frenzy. Now it's time for everyone to get their's out of the garage and try this recipe. No new-fangled air fry contraption thing at your home? No worries. This recipe can also be done in the Oven, Stovetop or yes, Deep Fryer. Even if cooked on the Grill, you can still call it American Fish and Chips. Check at the end for recipes to make Vegan and Vegetarian friends feel welcome at the gathering.
Ingredients (Appetizer for 4)
1 Lb. Boneless Catfish Fillet (the fresher, the better)
1 Cup Yellow or White Cornmeal
1/2 Cup Flour
2 Tbsp Water
Light Salt and Pepper to taste. Pinch of Cayenne is Ok.
Seasoning (3 Tbsp of favorite Seafood Blend, or)
1 Tbsp Smoked Red Paprika
1 Tbsp Dry Garlic
1 Tbsp Dry Onion
1 Tsp File Powder (optional)
1 Lb Potato (Russet, Idaho or Indiana)
2 Tsp Corn Starch
Directions for Cooking Fish
Air Fryer, Oven, Pan Frying or Deep Frying
Slice Catfish into 4-6" inch fillets. Season with Spice Mix and lightly coat in Flour mixed with Corn Starch. Dip in Egg Wash (Egg mixed with Water, Salt and Pepper). Then roll in mixture of Cornmeal and 2 Tbsp Flour Mix. Place on Rack the stay dry on all sides.
Air Fryer- Spray both sides with Vegetable Oil spray. Cook per Appliance Instructions (approx. 15–20 Min at 400 Degrees)
Oven- Spray Pan, then coat both sides of fish with Corn or Vegetable Oil Spray. Bake at 420 for 8–10 minutes per side until crispy.
Pan Fry- On Medium High cook in 3″ Inches of Corn Oil for 4-5 minutes per side until crispy.
Deep Fry- In Corn or Vegetable Oil at 340 Degrees for about 3–5 minutes until crispy.
For Grilling, Pan or Oven Roasting without Coating
Slice Catfish into 5-7" inch fillets, spray with Corn or Vegetable Oil Spray. Sprinkle evenly on all sides with Spice Mix. Spray Fish Strips again before:
Grilling- Sear on Medium heat on each side for 4-5 minutes.
Pan Roasting- Place in spray lubricated or in 2-3 Tbsp of Corn or Vegetable Oil. Sear in Medium heat on each side for 4-5 minutes
Oven Roasting- Place on spray-lubricated pan in 430 degree Oven for 5-7 minutes per side, until roasted.
For Cooking Chips
(Light dusting of Corn Starch helps seal in moisture and natural essence of potatoes. Will have slightly white edges when cooked. Flavor will be reminiscent of a creamy, buttery hot biscuit. No added Salt or Pepper needed).
Grilling- Cut Potatoes into 3″ to 4″ Inch Slices. Lightly Sprinkle with Corn Starch. Grill on Medium Low Heat for 10–15 minutes per side, until tender. Slice into 2″ Chips (or Fries) after cooking.
Air Fryer or Oven Roasting- Cut Potatoes into 2″x 3″ Inch Steak Fries size. Lightly dust with Corn Starch. Coat with Vegetable Oil Spray on all sides and cook at 420 Degrees for 8 to 10 Minutes per side, until crispy.
Deep or Pan Fry- on Medium High heat for 5–7 minutes, until crispy.
