Is there any reason you shouldn't make a vehicle battery out of several lithium 18650 batteries?

So now we move on to the question of "should you?" The answer is probably not. Here's why.
 
ATHENS, Ga. - June 29, 2022 - PRLog -- Yes, it theoretically would be possible to construct a vehicle battery out of 18650 Li-Ion cells. As others have correctly pointed out, many compact jump starters use 18650 cells in them, and they can provide the current necessary to start a car for a very short amount of time.

So now we move on to the question of "should you?" The answer is probably not. Here's why.
  • Lithium batteries cannot be charged at temperatures of 32 degrees Fahrenheit (0 Degrees Celsius) or lower. Doing so can permanently damage the battery, and make it unusable. I won't go into the exact chemical processes that create this problem, but know that you cannot charge a lithium battery in cold temperatures. Electric vehicles (EVs) such as the Tesla use a heating grid to warm the battery first when the car is charged in extremely cold temperatures.
  • Lithium batteries cannot handle extremely high temperatures, such as those inside of an engine bay. Of course, you could relocate the battery to the trunk, or some other location, but this would still not solve the cold temperature issue.
  • Lithium batteries have very special charging requirements. At a minimum, you would have to redesign your alternator, or build a charger downstream of the alternator, to support the charging profile required by lithium batteries.

So, yes, you could construct a vehicle battery out of lithium 18650 cells. But you would have to overcome some challenges to do so. For a "better" battery than a standard lead acid, look at absorbed glass mat (AGM) batteries. Since they are solid state, they are more durable than flooded batteries, and can last much longer. They also offer deeper discharging ability with no damage.
