The first place to start is defining what a coronavirus is, and what it isn't. Simply put, a coronavirus is a large family of infectious diseases that range from mildness to severity from a common cold to serious respiratory issues, such as SARS or MERS. As these illnesses travel from population to population, they can change slightly or greatly, depending on the overall environment. When this mutation happens and has not occurred before, it is known as a novel coronavirus because it has not existed and has been identified in the past.

For example, one coronavirus might emerge from another one that is currently circulating among a population. One way to illustrate this is to think of the disease itself as a tree growing out of the ground. Each branch grows from this tree but is different in its characteristics. This means that many of the same traits are shared, but there are a few different elements, and that is what scientists call a variant.

This concerns scientists because it means the diseases can morph and change, which means that any preventative measures and/or vaccinations or cures might not work with the new strain. Although the previously developed solutions might have some positive effects, they might be rendered nearly useless.

When a new variant emerges from a virus, it means that it must be carefully examined for the scientific community and medical community to understand its various properties. By carefully looking at the various factors in the mutation, medical professionals and scientists can develop new ways of dealing with the said variant. However, as it spreads, it can rapidly infect many people in a given population, and this is what makes these mutations so potentially dangerous.

Fortunately, modern scientific equipment and medical techniques have evolved to the point that we can more rapidly identify such mutations or variance and ultimately develop ways to deal with them, including through preventative measures, vaccinations, and even perhaps cures.
