By: Rumsey's Handmade Chocolates UK Stage 1 When you make them you start by 'painting' the mould with the chocolate to get the features, it's all in the eyes we find it best to have him slightly looking to the side to give him that cheeky look. Stage 2 We let them set at room temperature (albeit air conditioned so a cool room). Our chocolate is perfectly tempered by the chefs which means it sets well and is extra shiny, rather than 'dull' looking chocolate you buy in a supermarket. Stage 3 When the detail chocolate is set in the moulds then we take a large ladle and fill each half of the mould with milk chocolate (unless you have ordered a bespoke Santa), leave this to set and then give Father Christmas a second layer and seal him up. Stage 4 The chocolate Santa figurines stored in a cool room (which needs air con in the summer) of course for Christmas it's easy to keep temperatures down to perfect. Stage 5 - Final gift wrapping.
