Chef Boudreaux has a thorough grasp on Louisiana cooking and culture. The Dirty Rice was perfectly cooked and expertly seasoned. I've never had Crawfish bisque before, needless to say it had everything I've come to expect from Cajun-esque cooking... I didn't have to add ANYTHING... That speaks volumes about his character as well as his culinary proficiency."
