Jonathan Shared something on how he came up with the Idea, "It started as most, by necessity.  My wife and I were working for a great farmer at the oldest farmer's market in Chicagoland.   We came home with 3 bushels of kale and needed a way to preserve it, but knew if it wasn't in a ready-to-use accessible form we'd have a harder time getting the value out of it later.  We picked up our whole food preservation bible and then looked around for other healthful natural ingredients in our kitchen, like seeds, oats, and carrots, and yadda yadda yadda, our first whole food veggie burgers were born. All of NexVeg products take that same view of making farmer's market quality whole foods more accessible."
