Matthew McCahill, the Food & Beverage Director at Oxford Hotels and Resorts, has worked diligently with WTR Pool & Grill's Executive Chef Joe Garcia to create a more casual, yet lively and fun menu - perfect for bayside and sunset dining.
Q: Describe the new menu in five words.
A: Fun, fresh, Florida, bayside, and sunsets.
Q: What inspired the new menu?
A: We wanted to appeal to a larger audience and more locals within the Tampa region.
Q: What dishes are some new features on the menu?
A: There a couple new key players on the menu including: Maple Chicken and Waffle Cone, Florida Bayou Popcorn, Strawberry Shortcake French Toast, Titan Power Bowl, Beignet Doughnut Burger, and Toasted Spinach and Artichoke Dip. We've also created an amazing 3-course prix fixe menu, best served during sunset, for a more elevated dining experience.
Q: When does the new menu launch?
A: The menu soft launched on January 1st and is now available every day, with exception to the prix fixe menu which is available limited days during the week.
Q: What would you say are the hero dishes in this new menu?
A: A few popular dishes would be the Maple Chicken and Waffles, hand-breaded chicken bites, crispy bacon, brussels sprouts hash, and smoked Vermont maple syrup; the Strawberry Shortcake French Toast, made with thick cut brioche, macerated strawberries, and whipped mascarpone; and the WTR Tacos, which includes a choice of two tacos, blackened fish or grilled Gulf shrimp, with avocado aioli, cabbage, roasted poblano peppers, pico de gallo, and cotija cheese. However, our Florida Bayou Popcorn dish has been attracting the most attention; buttermilk battered gator tail with creole remoulade inspired by Executive Chef Joe Garcia's culinary experience in New Orleans.
Q: Are there any exotic, interesting, or unique ingredients used in the menu?
A: Alligator! We've also incorporated the Walkerswood Jamaican rub in our Walkerswood Shrimp & Grits - tastes truly phenomenal! Another premium ingredient included in the new menu is Nueske's bacon, the #1 bacon in the world and three-time award winning.
The Pierside prix-fixe menu consists of three courses, where guests choose one dish from each course. A few of the items featured include: Apple Panzanella Salad, Kale Caesar Salad, Crispy Brussels Sprouts made with bourbon-infused maple glaze and bacon lardons, Caribbean Shrimp Lettuce Wrap with grilled pear slaw and island chili sauce, Pepper Crusted NY Strip Steak with truffle shallot demi, and Seafood Pasta made with fresh diver scallops, Gulf shrimp, and calamari.
