5. Easy Corn Bread

Serves: 9


•¾ cup + 2 tbsp all-purpose flour

•1 cup yellow cornmeal

•2 tbsp sugar

•1½ tsp baking powder

•¼ tsp baking soda

•2 large eggs

•1½ cups buttermilk or milk soured with 1-2 tbsp lemon juice

•1/3 cup melted butter


1.Sift together the cornmeal, flour, sugar, baking powder and baking soda.

2.Add the eggs, melted butter and milk and beat together until smooth.

3.Pour batter into a well-greased 8x8 baking dish and bake at 350 degrees F (325 degrees F for glass bakeware) for about 25 - 30 minutes or until a wooden toothpick inserted in the center comes out clean.

4.Super Simple Succotash

Total cook time: 30 min.

Serves: 6


•4 thick slices bacon, chopped

•1-pint cherry tomatoes, halved

•2 cloves garlic, chopped

•1 small yellow onion, chopped

•5 ears corn, shucked and kernels cut off (about 5 cups)

•2 cups canned lima beans, rinsed

•1/4 cup fresh basil leaves, torn

•1 tablespoon red wine vinegar

•Kosher salt and freshly ground black pepper

Place a large skillet over medium heat, then add the bacon and cook until the fat has rendered and the bacon has crisped, about 10 minutes. Add the tomatoes, garlic and onions and cook until the onions have softened a bit, about 5 minutes. Add the corn and cook another 2 minutes. Add the lima beans and then remove from the heat. Stir in the basil and red wine vinegar, season with salt and pepper and serve.

3. 7 Layer Fiesta Dip

Prep time: 15 min.

Servings: 64


•1 can (16 ounces) refried beans

•1 container (16 ounces) sour cream

•1 package McCormick® Taco Seasoning Mix Substitutions available

•1 package (8 ounces) shredded Cheddar cheese, (2 cups)

•1 cup prepared guacamole

•1 cup chopped tomatoes

•1/2 cup sliced green onions

•1/2 cup sliced black olives

•Tortilla chips


1.Spread refried beans in shallow serving dish.

2.Mix sour cream and Taco Seasoning Mix in small bowl until well blended. Spread over refried beans.

3.Top with layers of cheese, guacamole, tomatoes, onions and olives. Serve 7 layer dip with tortilla chips.

2. Quick Bacon Ranch Slaw

Prep time: 5 min

Cook time: 10 min (to cook and chop bacon)

Serves: 12 (just double everything for a large group)


•2 (16oz) package slaw mix

•1 1/2 cups Ranch dressing

•10 slices bacon, cooked and chopped


Mix together all ingredients and refrigerate until ready to serve.

1.Heirloom Tomato and Bacon Summer Salad

Prep time: 13 min.

Serves: 4 to 6


•5 to 6 medium heirloom tomatoes

•1/2 cup fresh corn kernels (1 ear of corn)

•4 slices cooked bacon, crumbled

•2 tablespoons red onion, thinly sliced

•2 tablespoons blue cheese crumbles, optional

•2 tablespoons red wine vinegar

•2 tablespoons extra virgin olive oil

•pinch kosher salt

•pinch fresh ground black pepper

•2 tablespoons fresh basil, chopped or chiffonade


1.With a knife, slice the tomatoes into ½ in. thick slices. Arrange the tomatoes on a large plate. On top of the tomatoes, evenly sprinkle corn, bacon, red onion, and blue cheese.

2.In a bowl briskly whisk together the red wine vinegar and olive oil until combined.

3.Pour the vinaigrette evenly over the salad. Sprinkle with salt and pepper and garnish with basil. Serve immediately.
