Some pickles can be prepared very easily, within just a few minutes. Add mustard seeds, salt, vinegar, sugar, and garlic to a pan and heat it over medium high flames. Continue stirring and cooking till the sugar dissolves. Put dill, sliced cucumbers, and bay leaf in a bowl and pour the freshly-prepared liquid into the bowl. Allow the dish to cool down to the room temperature. After that, toss a few drops of extra virgin olive oil and your healthy, easy pan pickle is ready.

3. Mashed Aloo (Potato) Garlic: Boil potatoes and garlic in a pan for about 20 minutes. Keep the lid half-open while boiling. Drain the water. Mash potatoes and garlic together. Add powdered, roasted cumin powder, chopped onions, red chilli powder, and finely-chopped coriander leaves. Sprinkle a few drops of extra virgin olive oil and your healthy, evening, homemade snack is ready. A great option to serve kids after school!
