BOCA RATON, Fla. - March 27, 2018 - PRLog -- True Food Kitchen (http://truefoodkitchen.com/), the award-winning seasonally inspired health-driven restaurant, which opened in February at Town Center at Boca Raton, will release its new Spring Menu on Wednesday, April 11. Guests will get a sneak peek of the new menu during Easter Brunch on Sunday, April 1, when TFK will offer select Spring Menu items in addition to its regular brunch menu. Continuing the spring celebration, True Food will be celebrating Earth Day all month long with an inspiring Grab & Go GREEN Promotion when guests will receive a free canvas tote bag for each to-go order picked up at the restaurant, encouraging sustainability in our community.

Co-founded by integrative medicine expert Dr. Andrew Weil and nine-time James Beard Award nominee for Restaurateur of the Year Sam Fox, True Food Kitchen's progressive and flavor-forward menu is rooted in the principles of Dr. Weil's anti-inflammatory diet and caters to foodie palates and preferences with a variety of gluten-free, vegetarian and vegan offerings for brunch, lunch, dinner and cocktails.

The restaurant regularly rotates its menu to highlight seasonal ingredients and simple preparations to let guests experience produce at the peak of its freshness and flavor. The new Spring Menu will feature five new dishes and six new beverages, with slight updates to some of the current menu items. New vegetables include the Spring Asparagus Toast (vegan) with roasted cipollini onion, green garbanzo, tahini, mint, and hemp seed, and Miso Glazed Eggplant (vegetarian, gluten-free) with lentil, roasted pepper, almond, truffle, tahini yogurt, and black walnut pesto. The Seasonal Ingredient Salad (vegetarian, gluten-free) will feature watercress, grilled broccolini, asparagus, green garbanzo, goat cheese, raisin, sprouted almond, and turmeric chia vinaigrette, and the new Grilled Artichoke & Pesto Pizza  (vegan) is toppedwith artichoke, spinach, summer squash, black walnut pesto, lemon, aleppo chili and vegan almond ricotta.

"We are continually trying to utilize all resources to find the next big food trend, as well as setting the trend ourselves. The Spring Menu changes are driving more of our food toward toward-a lowered use of 'added sugar', as well as introducing new ingredients to our kitchen like Black Walnuts," says True Food Kitchen Regional Director of Culinary Standards Taylor Domet. "Black walnuts have been used since ancient civilizations. The health benefits include brain functionality and cognitive ability, as well as gastro-intestinal benefits.  The ones we get are cultivated and hand harvested in the Northeast U.S."

True Food Kitchen is well known for its antioxidant-packed desserts and will welcome a new spring feature, the Strawberry and Rhubarb Crisp(vegan, gluten-free) with almond crumble, chia seed, and vanilla ice cream.. New cocktails include the Basil Cucumber Collins with lemon-infused vodka, cucumber, and basil, Farmers Market Sangria with organic white wine, spiced brandy, lime, and pineapple, Lemongrass Margarita with añejo tequila, mango, lime, jalapeño, and lemongrass, Strawberry Smash with bourbon, muddled strawberry and lemon, Sparkling Honeydew with honeydew, ginger honey, and lime, and the Cucumber Cooler with cucumber and honey lemonade.

There will be slight updates made to brunch menu's Johnny Cakes, swapping out blueberry for banana, as well as the Medicine Man refresher, now featuring green tea and cherry and the Bright Eyes juice, now using pear. Brunch cocktails will include a Cherry and Pomegranate Mimosa.

When it comes to the preparation of new spring dishes, Domet believes that "simple is good!" He continues, "We take bold flavors and try to counterbalance them to create a layering of textures, flavor and visual appeal.  Something spicy needs something cool to balance, something bitter needs something sweet, etc.  This core approach allows us to interchange ingredients where necessary to achieve maximum flavor contrast."

Sneak Peek of Not-Yet-Released Spring Menu Served Up At Easter Brunch, Sunday, April 1

Guests will get an advance sampling ofthe new Spring Menu items when True Food Kitchen features a special Easter Brunch menu that includes a selection of dishes and beverages offered for that day only, before launching on April 11. The Easter menu will highlight the Lemongrass Margarita, Strawberry Smash, and Cucumber Cooler cocktails, as well as the Spring Asparagus Toast, Seasonal Ingredient Salad and Strawberry Rhubarb Crisp.

Celebrating Earth Day with Month-long "Grab & Go GREEN" Promotion


Along with the new Spring Menu release comes a celebration of Earth Day. In an effort to actively support, practice and encourage efforts related to sustainability, True Food wants to inspire guests with its "Grab & Go GREEN" month-long promotion.  Any guest who orders True Food To-Go and picks up their food in the restaurant will receive a complimentary sustainability-themed reusable canvas tote bag. The assortment of four collectible canvas tote bags will also be available for purchase at just $10 each.
