By: Park Hyatt Seoul The course begins with homemade pine needle tea, while appetizers include, short plate beef tartare, dumplings made from neck chain, and ugogju granita. The main dishes will feature short plate, hanging tender, and neck chain special cuts, all served and presented with a charcoal brazier for two. The menu will also include special sauce and soybean soup made from homemade soybean paste, which itself is made from fermented soybean lump and sun-dried salt, a preparation that is being showcased for the first time during this promotion. Guests can also enjoy various side dishes including assorted mushroom nutritious rice, pickled chamnamul, pan fried zucchini oyster mushroom and grilled bean paste seasoned eggplant. The course will end with ginseng ice cream served with pear compote and more.
