Bavarian Inn Executive Chef Phil Fahrenbruch, a 2012 Silver Plate Award winner, has planned a five-course feast featuring creative food and wine pairings. The starter course is spring pea risotto with confit pork belly and a balsamic glaze, accompanied by Clos Palet Vouvray from France's Loire Valley. A serving of Octopus Carpaccio follows, served with Ruby Red Rosé with Grapefruit. It's a blend of 80% Cotes du Provence Rosé and ruby red grapefruit juice, popular across France for its refreshing flavor. Next is a salad serving of arugula, Lolla Rossa and butter lettuces, roasted beets, candied pecans, Saint Andre brie, sundried cranberries with a cranberry vinaigrette dressing. The salad course will be paired with Bellavita Sweet Red from Italy's Veneto region. Following a refreshing sorbet du jour, the entrée is a beef fillet with Dijon wine sauce over creamy polenta. It will be served with Arcaia Cabernet Sauvignon from Veneto, Italy. The dessert course is chocolate pretzel peanut butter cup pie, served with the Bavarian Inn's exclusively imported light, semi-dry Liebfraumilch from Germany's Rheingau region.
