Learn To Pair Food & Wine with Culinary Classes

FULLERTON, Calif. - April 18, 2016 - PRLog -- Foodies and hosts alike will enjoy the Fullerton Arboretum's new series of Culinary Classes, which begin Thursday, April 21st.

These classes will be taught by Chef Laurent Brazier of La Cuisine Culinary Arts, who brings over 32 years of experience to the table. These classes will focus on cooking a delicious meal and pairing it with the perfect wines. Open to cooks of all skill levels, anyone 21 years and older can register.

Session 1: Champagne & Sparkling Wines (Thursday, April 21st)

The first session focuses on pairing champagne and sparkling wine with the menu below.

On the menu:Crab & Avocado Egg Roll, Oysters on Half Shell - Pepper Mignonette, Smoked Salmon & caper Roulade, Dill Creme Fraiche, Crayfish Souffle with Chives and Mushrrom, Fresh Strawberries with Champange Sabayon.heat Berry Salad with Strawberries and Crispy Shallots, Roasted Sweet Peppers and Carrots with Orange and Hazelnuts, Pan-Roasted Salmon with Fresh Onion and Fennel Salad, and Lemon Honey Cake.

Time: 6 PM

Session 2: Cuisine of Provence (Thursday, June 20th)

The second session will focus on food from the Provence region.

On the menu: Olive Tapenade and Shrimp Feuillette, Classic Salad "Nicoise" with Seared "rare" Ahi, Olive, Haricot Vert and peppers, Petite "Bouillabiasse" with Saffron Rouille & Croutons, Grilled "Entrecote" Steak - Marinated Provencal Vegetables, Apple, Walnut, Pinenut and Raisin Tarte.

Date: Thursday, June 30th

Time: 6 PM

Session 3: Key Varietals of the World (Thursday, July 21st)

The third session will focus on key varietals of wine around the world.

On the menu: Shrimp & Leek "Vol au Vent" - White wine cream sauce, Bacon Crusted Scallops over Braised leeks, Grilled pork Tenderloin with Olive - Thyme Jus, Green Pepper Crusted duck Breast - Endive Confit, Vanilla Bean creme Brulee.

Date: Thursday, July 21st

Time: 6 PM

Cost: Buy a bundle of all 3 classes for $229 or $199 for Arboretum Members. Single class cost: $90 per person or $80 for Arboretum Members. Cost includes dinner, cooking class, and beverages.
