eVolve Restaurant Receives TABC Approval

eVolve Restaurant will feature wine and beer to compliment is micro-seasonal menu. Chef Adam Scott says they will remain focused on local with their craft beer selections and plan to feature some unique wine offerings.
 
SEABROOK, Texas - Dec. 23, 2015 - PRLog -- Chef Adam Scott, owner of eVolve Restaurant will be featuring some very uniquie wines on his upcoming wine list. While working with his TABC local branch, Adam has also been researching, sourcing and tasting wines from all over the world.

In addition to working on designing a wine list to compliment the ever eVolving menu and concept, Chef Adam has been talking to a variety of local microbreweries, once again working hard to support other local start ups.  'I have been speaking with breweries that are less than a year old, all the way to some of the oldest in the area' says Adam. 'In everything we do here at eVolve, I like to keep as much focus in this area as possible.  Obviously not everything we offer will be from Texas, but a lot will be.'

In addition to the main wine list, eVolve will feature wines that compliment their seasonal offerings as well. Rather than have a wine for each dish, Chef Adam says he plans to look for wines that pair well with food of the seasons. 'You can taste a Pinot Noir and just know it will go great with almost anything avaiable in spring time.  But then, you can find one that will stand up to all the braises, sauces and flavors I use in colder months. Neither one is better than the other, and neither is wrong, but they are different.  That just means I have to really dig deep and find those really great ones. I am already working on the summer wines. It generally takes me 2-3 months to pick even a few wines for a list.'

Chef Adam will rely on many trained and experienced sommiliers. Having traveld extensively in Europe, making friends and connections has been really paid off for Chef Adam. 'Having met and worked closely with people all over the world, I know who to call about which wines and vineyards. Even locally, I have made some really great friends during this process. I mean, if I am picking your brain about 7  wines I am asking you to try, well, its easy to see how we would become friends quickly. Especially if you are a wine conosouer.'

Chef Adam plans to roll into the new year with a small wine list. Mostly available by the glass, Adam wants his guests to experience many new wines, flavors and even some varietales they may have shied away from in the past. As the trends start to form, and he identifies what the local market prefers, he plans to expand the list. 'While I will never have the biggest wine list in the area, I plan to have one of the best.' says Adam.

Beer and wine sales will start at eVolve Restaurant this weekend. Chef says he is extending the current BYOB policy even for this weekend until the word gets out to all his guests.
