EarthWater introduces High Pressure Pasteurization (HPP) for Optimal Health & Wellness on Products

This is achieved after the product has been put in bottles, capped and labeled.”

Price added, “At 87,000 PSI for 4 minutes in the system at HPP Foods all potential pathogens are eliminated including airborne platelets, spores, or other possible types of contamination. This means we can continue to cold fill the product and under this pasteurization process which will ensure the highest quality finished product for consumers.”

Ultrahigh Pressure (UHP) offers amazing possibilities for cold fill beverage processing. Pressures between 300 and 600 MPA can inactivate yeasts, molds and most vegetative bacteria including most infectious food-borne pathogens. Thus, pressure is a potential alternative to heat pasteurization as pressure leaves small molecules such as many flavor compounds and vitamins intact.

High Pressure Processing is a cold pasteurization technique which consists of subjecting food or beverages, previously sealed in flexible and water-resistant packaging, to a high level of hydrostatic pressure up to 600 MPa / 87,000 psi for a few seconds to a few minutes. It is the same effect as subjecting the food or beverage to an ocean depth of 60 Kilometers deep — if an ocean this deep existed!
