Fattoria e Mare Unveils New Seasonal Summer Menu
Owner and Executive Chef Pablo Estrada is inspired by seasonal ingredients and is constantly reinventing his menu to offer diners classic dishes with a modern spin. For example, his Balakian Farm Heirloom Tomato Caprese Salad features a myriad of tomato varieties, including Yellow Brandy Wine Tomatoes which offer a sweet flavor with low acidity. He also added in cucumbers for crispness and contrasting textures, finishing it off with a drizzle of balsamic vinegar.
Another new dish that has been added to the Summer Menu is the Free Stone Peaches with Walnut Raisin Bread Crostone and Gorgonzola Dolce Cremificato. Chef Estrada balances out the sugariness of the peaches with the strong flavor and creaminess of the Gorgonzola.
Chef Estrada has also added new entrees like a succulent Half Lobster al Diavolo with Bucatini and Bell Peppers and tender Mary's Ranch Chicken al Mattone with Summer Squash and Cherry Tomatoes.
Plus, the menu features a Chef's Special Prix Fix which offers the diners the chance to have Chef Estrada personally cook them a special meal with items not on the regular menu.
"I love to be creative in the kitchen," said Chef Estrada. "That's why I am constantly changing and tweaking my dishes. I try and come up with items which can satisfy a range of palates, while also taking into account what ingredients are fresh for that particular season."
