MANASQUAN, N.J. - March 23, 2015 - PRLog -- Nothing says summertime at the Jersey shore like a coconut treat enjoyed while reading a good book, says Stephanie Pedersen, author of “Coconut: the Complete Guide to the World’s Most Versatile Super Food.” Tonight, she’s headed to Booktowne at Brielle Library, a leading year-round bookseller, for a 7 p.m. book talk, question and answer session, and signing, followed by networking and photos.

“We’re going to talk about the benefits of coconut,” says Pedersen. “How to use coconut products to enhance healthiness is one of those benefits.”

A working nutritionist at High Impact Health (www.highimpacthealth.com), Pedersen says that proponents of healthiness claims for the healthy fat in a coconut rich diet say individuals could see improvement of digestive disorders, increased weight management, and a lowering of blood pressure. Based on prevailing thought, those concerned about their liver or Alzheimer’s disease may also find health support in coconut as a dietary choice, she says.

“Personally, I enjoy coconut in my diet almost daily for its taste as well as its health benefits,” she says.
