·          Olive oil is one of the healthiest substitute for any fat used in any cooking recipe. Try substituting butter or shortening with olive oil.

·          Olive oil contains absolutely no cholesterol.

·          Using olive oil in place of saturated fats as the main fat in your diet may actually help reduce cholesterol levels.

You can bake with olive oil. Just substitute the same amount for the fat called for in the recipe. The result is moist, even textured cake with a tender crumb.

Little known facts about the Olive Tree:

·          Olive trees can live up to 600 years or more.

·          It takes 5-8 years before an olive tree will bear its first fruit.

·          There are over 800 million olive trees now planted worldwide.

Holman Ranch Olive Grove Background:

Holman Ranch has its own distinctive olive grove located on a south facing hill of our vineyard. The grove is comprised of 100 trees with multiple cultivars planted. These cultivars consist of 25 Frantoio, 25 Leccino, 10 Mission, 25 Coratina, 5 Pendolino, and 10 Picholine, all of which were originally planted in 1994 in a Carmel Valley orchard then replanted at Holman Ranch in 2007. These mature olive trees allowed us to produce olive oil right away. They are planted in shale for the best production and harvesting results possible. We harvest our fruit by hand in December, which is then milled, producing a superb, high quality product. Although the Olive Grove is not certified organic, we do employ organic practices when farming our trees. Our mill, however, is certified organic. An interesting fact is that olive trees are alternate bearing, which means that one year they may produce 650, 375ml bottles bottles worth of oil, while next year they may produce only 50, 375ml bottles.

A delicate balance of flavor from the six olive varietals grown in our olive grove are blended to produce our Tuscan style Holman Ranch Olive Oil.

Frantoio Olive

A fruity olive oil with an even balance of pepper and bitterness is produced from this olive. This varietal is predominantly grown in the Tuscan region of Italy.

Leccino Olive

This medium sized, purplish-black, oval shaped olive produces a delicate oil with a mild, fruity flavor. Mainly cultivated in the Tuscan region of Italy, this olive can be found in many regions of the world because of its adaptability to different growing environments.

Mission Olive

A unique varietal to the United States, the Mission olive oil’s flavor varies depending on the time of year it is harvested. A November harvest yields an oil that is green in flavor and aroma while olives harvested in January produce a milder, smoother taste.

Coratina Olive

Originally from Puglia in Southern Italy, the oil from this olive has a strong, peppery flavor with a hint of sweetness.

Pendolino Olives

This medium to small sized olive produces a mild, delicately flavored oil that is pleasing to the palate.

Picholine Olives

Originally grown in France this is a type of immature olive which is green in color. The oil produced tends to have a delicate, subtle flavor with a touch of saltiness.
