The Food Safety and Inspection Service (FSIS) in the United States Department of Agriculture (USDA) regulate the meat processing industry. Rules and regulations pertaining to sanitation standard operation procedures enforced by FSIS are published in Title 9 of the Code of Federal Regulations (CFR) in Chapter 3, Part 416. plants.
