Bollinger La Grand Annee Vintage 2004

"Terrific wine. Very classic bready, brioche-like Bollinger, with full body and no excess of acidity apparent. Power and drive, dryness and backbone in a firm, taut line through the palate and then a very long follow-through." Huon Hooke

The Prestige Cuvée of Champagne Bollinger. It is only produced when exceptional quality harvests occur, and is the expression of Bollinger’s know-how. More than the illustration of the vintage particularity, La Grande Année is the result of the Bollinger style, of its exceptional “terroir” and traditional wine making techniques. La Grande Année develops a beautiful rounded structure and combines rich, complex and intense aromas, the expression of which changes according to the characteristics of the vintage.

Champagne Ayala Perle D'Ayala 1999 Vintage

"Now that it is owned by Bollinger, Ayala is returning to form. The style of this prestige cuvee is mature and dry, a fresh yeasty character showing against toastiness and pink grapefruit acidity. The finish is very crisp and dry. - R.V. The Wine Enthusiast Magazine

The Cuvée Perle is an exclusive blend of 80% Chardonnay and 20% Pinot Noir; all the grapes being selected from Grand Cru villages (rated 100% on the “échelle des crus” scale). As clear as crystal, its colour is pale gold with a very light amber glint. There is a finesse to the bubbles. The nose offers a delightful bouquet of very ripe dried fruit, acacia honey, and pineapple and ginger bread. On the palate the wine is generous, harmonious and delicate with some very subtle notes of vanilla and toast which reveal their ageing with natural cork. On the nose the notes linger at the finish with remarkable freshness and finesse. This wine has been aged for 6 years in our cellars. The real cork used for this long ageing allows for the best control of oxydoreduction and ensures the development of very delicate and complex aroma. This is a very rare practice in Champagne today and thus bottle is renowned for its famous “bague carrée” (square ring). FOOD PAIRING The freshness of the Cuvée Perle goes well with delicate entrées such as a carpaccio of duck foie gras, pastry of salmon and red mullet or raviolis of ris de veau and lobster.

Louis Roederer 2006 Brut Vintage

Golden tones with light amber highlights, typical of the Pinot Noir. Exuberant mousse with a lively stream of bubbles. Subtle, nutty-citrus nose - scents of orange and hazelnuts punctuated by those warm, fruity notes typical of predominantly wood-aged Pinot Noir. Swirling the glass releases a flurry of richer, riper fragrances: crystallized fruit, baked apples, toast, Tarte Tatin and caramel. The palate is characteristically vintage Roederer: deep and full on first attack, showing rich, rounded vinosity but with all the refined sweetness, acidity and tight-knit texture of Pinot Noir

fruit from the Verzenay vineyard. Perfectly integrated overall, with an elegant, almost feminine feel and flavours that evolve towards the sweet, palate-caressing texture of candied fruit, marzipan, toast, white chocolate and caramel. A classic vintage Brut: all the traditional flavours of Champagne expressed with a refinement, precision, purity and harmony that is quintessentially Roederer.
