By: Culinary Fight Night
The secret ingredients for this final round were Goldfish Crackers, Wintergreen Altoids and harissa. Chef De Jesus decided to take on the ultimate challenge and use all 3 secret ingredients in his appetizer, a challenge no other chef in this series chose to attempt. His appetizer; Crispy Goldfish Cracker and panko crusted Thai Crab Cakes with a mango-harissa chive slaw and an Altoid-lime zest vinaigrette, was a crowd favorite. For his entrée, chef served pan seared Veal Medallions with a homemade Boursin cheese Beet Risotto, shaved Brussels and a horseradish demi glaze. Jose raised the bar for dessert and prepared a trio of sweets; Cashew Croissant Bread Pudding, caramelized Banana Mousse with spiced chocolate sauce and a traditional South American Coquito shot to seal the deal.
