Salvatore’s Restaurant Turns Challenging Space into New Interactive Dining Concept

BOSTON - Aug. 1, 2013 - PRLog -- Any real estate in a restaurant that could be used to accommodate guests is valuable, so when Salvatore’s Restaurant in Boston’s Theatre District was faced with a strange architectural feature, a shelf of sorts perched high above the restaurants dining tables, the management was uncertain what to do with it. “It literally sat idle for months. We tried using it as a service station which didn’t make sense because of the traffic flow, then we were reduced to trying to put items on it like flowers and menus, but nothing looked right, so we simply gave up and said we’d just live with it,” said Director of Operations Chuck Barbato.

It wasn’t until a busy evening servicing the theatre crowd when customers were waiting close to an hour that a use for the shelf was born. “I had a full restaurant, the bar was three rows deep and I had guests waiting despite reservations to get a table and one very annoyed women said, ‘I want a table and I want it now!’ I thought quickly and said, well, we do have our director’s table? I started to sweat because it just came to me, but I knew I had to sell it. I grabbed two extra bar chairs we had and scooted them up to the shelf and the customers went for it,” said Kate Martland, General Manager.

That is usually where a story like this ends, most likely becoming part of the staffs post service highs and lows evening roundup chat. But Martland took a seat at the table herself and it clicked. This previously unused shelf was truly two of the best seats in the house. The angle, the height, the entire positioning created a feeling of being perched above the entire restaurant experience and the improvised name worked.

A pair of director’s chairs meeting the proper height specifications were ordered and the added perk of the diners at the “Director’s Table” being allowed to send a free dessert to the table of their choosing made it not only a pair of great seats, but a unique dining experience as the directors of service.
