What: A Week of Nova Scotia Cuisine

The week of Nova Scotia Cuisine will feature the depth and texture of the freshest seafood in the world. The menu highlights will feature sea scallops; encompassing 4,600 miles of coastline in Nova Scotia. Sea Scallops are commonly used as the main course, and as a garnish in salads and soups. Scallops often are referred in the culinary world as ‘sea candy’ due to its salt and sugar content. They take center stage, starting with the scallops seared with duck fat served on a pool of smoked spinach puree, tomato confit and a crisp pork belly. Truly created and influenced by French Canadian and European culinary invasion, creating a diverse experience for the palate.

About Chef Owens, the Kilted Chef NC

Chef Owens was born in the land of the Irish. He came to the United States for his second tour over a year ago. He brings to Saltwater his fluency in seven languages, his education in French cuisine and more than 23 different country cuisines. You could say he knows the luck of the Irish being married to another chef who is of Russian descent. Rumor has it he has never prepared the same meal for his wife since the day of their marriage.
