Cornerstone’s New Signature Menus At Park Hyatt Seoul
Specialising in grilled meat & seafood in wood-burning ovens, homemade pastas & desserts with an Italian touch, Park Hyatt Seoul’s restaurant, Cornerstone, presents new signature menus from January 21 created by new Executive Chef.
Under the command of newly appointed Park Hyatt Seoul executive chef Massimiliano Ziano and Cornerstone chef Federico Heinzmann, new signature menus have been recreated with Italian touch the chefs’ unique recipes. With the concept of ‘family-style’
The unique features of signature menus are an aromatic smoke flavour of seasonal wood and well-preserved juices and moisture that present rich texture and flavourful taste of the ingredients. Meat and seafood are first grilled and then placed deep inside the wood-burning ovens in a very high temperature in order to be instantly cooked and produce crispy outside and juicy & tender inside. The unique new menus exclusive at Cornerstone include: (1) 500g US Creekstone T-bone steak, (2) 1++ premium Korean han woo sirloin, (3) potted foie gras layered with grape-quince jam, (4) French-style steak tartare made using freshest raw meat, (5) Norwegian salmon wrapped in paper bark to preserve the juicy flavour, (6) ceviche featuring sea scallop, yellowtail, lime-passion fruit salsa on a hot sizzling plate, (7) seafood on ice featuring lobster, prawns, scallops, crab, mussels, oysters (8) homemade tortelli with cherry tomato and mozzarella cheese, (9) farmed mushroom casserole with fresh herbs, (10) oven-baked winter soufflés including passion fruit soufflé and chocolate soufflés and more.
