Nov. 19, 2012 - PRLog -- Yes, my diet is mostly vegan these days (no food with a face or a mom).

NO! I don't like the taste of Kale....that is until recently.

Let me explain.

I smoked up the kitchen (setting off smoke detectors) trying to make "Kale Chips" (a HUGE disaster I wasted $10 dollars of Kale). I also tried a couple of other recipes with Kale in the past.

But I simply do not  like the taste of it.

But come on --- it's NUMBER ONE on Dr. Joel Fuhrman's "Nutrient Density Score" Chart. So suck it up right?

If you don't know who Dr. Joel Fuhrman is let me suggest you do some research. He is turning the 'diet community' upside down. (And, I believe, coined the term: Nutritarian).

His claim to fame is that people have lost more weight with his 'diet-lifestyle' than bypass surgery. Not only that but they have kept off the weight without all of the yucky side effects of bypass surgery. His research proves that 98% of HEART ATTACKS is food created. (WOW!)

Dr Fuhrman:
Joel Fuhrman, M.D. is an American board-certified family physician who specializes in nutrition-based treatments for obesity and chronic disease. He is a member of the board of directors of the American College of Lifestyle Medicine, and serves as Research Director of the Nutritional Research Project. He is on the medical staff of Hunterdon Medical Center.

Fuhrman is the author of five books, and a number of journal articles. The Second Edition of Eat to Live reached the New York Times Best Seller list in June, 2011. He has appeared on several radio and television shows. Fuhrman coined the word "nutritarian" to label people who adopt a micronutrient-rich diet style. He created the Health Equation: Health = Nutrients/Calories (abbreviated as H = N/C). This equation signals that future health can be predicted by the micronutrient per calorie density of the diet.


Oh yeah...the recipe!
So I watched a number of videos on YouTube with elaborate Kale soup and other Kale recipes. Then I decided since (as a partner of MoonLightWealth.Com) my thing is simplifying the complex - I came up with this simple recipe. Here it is:

- Get a bag of pre-cut (and pre-washed) Kale (I like Trader Joe's bags).
- Can of black bean soup (also works with minestrone).
- Vegetable stock (Trader Joe's).
- a blender

Take a nice big hunk of Kale (making sure that you remove the large, thick vein on the leaves). Pour a half-cup of vegetable stock in the blender. Add the leaves. Blend the leaves until paste-like. Now open the can of black bean soup, place in a large bowl, and stir in the "Kale-paste". Nuke (microwave) for 3 minutes on high. Pull out the bowl, add some Mrs. Dash seasoning (I like the SPICY blend) stir it in the soup and VOILA!

A nice Kale Black Bean soup!

Easy, simple, and FAST.
