Next you will want to layer your leftover mashed potatoes on top of the rice. Smooth it down and cover the rice completely. Next, throw on some of that extra turkey, stuffing, and cranberry sauce. With all of this layered on top of one another, roll up your mat to shape all of this into your roll. Cut the resulting product into portions and enjoy your delicious Thanksgiving Leftover roll!

Perhaps the greatest thing about this alternative is that both meat eaters and vegetarians can make their own version of it.  If you prefer, you can leave the turkey out and load the roll down with your favorite Thanksgiving veggies.

Of course, going this route may cause you to rethink using turkey as your focal point for your meal, but that’s not always a bad thing.
