Oct. 16, 2012 - PRLog -- In October 2012, Park Hyatt Seoul has officially announced that Massimiliano Ziano has been appointed executive chef of the hotel. Born in Italy, Chef Massi started cooking at the age of 16 and after graduating from hotel & culinary college, he started working as chef de partie at a restaurant located in a renowned golf club in 1991. He built his professional experience in Italy and the UK’s most famous Michelin-starred restaurants, such as ‘La Smarrita’ and ‘Balbo Restaurant’, and soon began his career with Hyatt in 2002. While working as executive sous chef at Grand Hyatt Jakarta, he joined Park Hyatt Seoul’s task force team in 2005 and took responsibility for training chefs and opening the main restaurant, Cornerstone. After working as executive sous chef at Grand Hyatt Singapore, then later as executive chef at Park Hyatt Saigon and Grand Hyatt Shanghai, he came back to Park Hyatt Seoul in October 2012, to accept executive chef position, taking the overall responsibility for the hotel’s entire culinary team, including The Lounge, Cornerstone, The Timber House, and events.

Cornerstone has appointed a new chef as well. Argentinean Federico Heinzmann majored in food & beverage marketing in university and qualified as a professional sommelier and cook. After starting his career at an Italian restaurant in Argentina, Chef Federico has worked in three-star Michelin restaurant ‘Martin Berazategui’ in Spain, Marriott Plaza Hotel and Wine Club French Restaurant in Buenos Aires. From 2006, he has worked as sous chef and chef de cuisine in restaurants, bars, and banquet services at Palacio Duhau Park Hyatt Buenos Aires, where his talents were well recognised. Appointed chef de cuisine of Cornerstone in October 2012, Chef Federico specialises in dishes cooked in wood-burning ovens using seasonal wood to add unique and exquisite flavour.

Chef Massi and Chef Federico spoke about their aspirations, saying that, “Based on long years of experience and know-how, we will make continuous efforts to create cuisine that is perfect not only in taste, but also in presentation and nutritional value, in order to offer refined dining experience with unique and exceptional dishes, exclusively at Park Hyatt Seoul.”
