Chef Hitomi Ito started his career as a helper in one of the premier sushi restaurants in the Asakusa area in Tokyo, Japan when he was 20 years of age. After three years, Ito became a cook and later became a successful sushi chef despite a lack of formal education.
In 1989, Chef Ito moved to Guam to further his career and worked in various restaurants and hotels such as Hotel Nikko Guam, Hyatt Regency Guam, Yokozuna Restaurant and Kiyosato, until he moved to Saipan.
To introduce Chef Ito’s sushi creations to the local community, Miyako Japanese restaurant is hosting a special omakase menu promotion from 17 October 2012 to 16 November 2012, except Saturday nights, from 6:00 pm to 9:00 pm. Omakase, which translates to “I’ll leave it up to you”, is used at a sushi restaurant to leave the selection to the chef. Chef Ito is presenting traditional ingredients and preparations to highlight the 2,000-year-old custom of sushi-making.
